Make it for Mom! Strawberries and Ricotta … dad and the kids can easily put this together on Mothers Day morning no matter what your plans are for the day. The first time I used this idea, the fruit was fresh ripe cherries and the balsamic I chose was our Black Cherry Dark Balsamic. I added almonds and completely enjoyed it so much that I have modified it many times – which I give you suggestions on doing – and used it for breakfast, snacks and even dessert, which was a big hit. Today I have suggested fresh Strawberries and our Wild Raspberry White Balsamic. Quality ingredients make creating things easy, fun and delicious. If you don’t have ricotta, use Greek yogurt…. or vanilla ice cream!

Strawberries and Ricotta
This treat takes only moments to make and can be a delicious breakfast, a nutritious snack for the kids or dressed up for dessert!
Ingredients
- 1 lb fresh strawberries, trimmed and quartered - or raspberries, blueberries, kiwi's
- 16 oz whole milk ricotta -
- 2 tbsp Cultivated Tree Eureka Lemon Fused Olive Oil
- 2` tbsp raw honey - optional
- 2+ tbsp Cultivated Tree Wild Raspberry White Balsamic, + for drizzle - or Key Lime Balsamic if using kiwi's!
- 1/2 tsp lemon, lime or orange zest - optional
Instructions

In a medium bowl, combine ricotta, Eureka Lemon Fused Olive Oil and honey (optional). Stir until completely combined and smooth - adjust ingredients to your taste.

In a second bowl, add strawberries and Wild Raspberry White Balsamic and fruit zest. Combine until coated.

In individual bowls, parfait cups, or wine glasses - whatever suites your mood - layer the ricotta and berries. Top with a good drizzle of the balsamic you chose to use. Enjoy!
Recipe Notes
NOTE: For a dessert just add a walkers shortbread cookie tucked into the side of the serving dish and toasted nuts. The toppings and ideas are only limited to the season's fruit and your imagination.
Alternate combinations: Fruit & Suggested Aged Balsamic
Kiwi's and Key Lime White Balsamic, Raspberries and Raspberry Dark Balsamic, Blackberries and Blackberry Ginger Dark Balsamic, Peaches and Peach White Balsamic or Cinnamon Pear Dark Balsamic - you know my attitude ... there are no rules - use what you like!
