Mediterranean Rice Salad
Mediterranean Rice Salad is perfect in the heat of summer and very easy to tweak to personal tastes. It is best served at room temperature. We like it with hummus, pita, falaffal’s and a burger.

Mediterranean Rice Salad
Great salad to enjoy in the heat of the summer! Serve a side dish with pita and hummus.
Ingredients
- 1 1/2` cups cooked brown Basmati Rice
- 1 15oz can Cannanelli Beans rinsed
- 1 cup hothouse cucumber diced
- halved Cherry or Grape tomatoes to ratio you like about 3/4 – cup
- 1 1/2 tbsp minced shallot
- 1/4 cup chopped Italian Flat leaf parsley or fresh chopped basil!
- Salt and Fresh grund pepper to taste or our Seasonello Salt is GREAT with this!
- 1/2 cup Feta cheese
- 1/4 cup Cultivated Tree Basil Infused Olive Oil or to taste or Have Fun trying different Olive Oils from the store!
- 1/2 tsp fresh oregano or thyme
- 1/2 tsp lemon zest – optional
- 1/4 tsp red pepper flakes – optional
Recipe Notes
We created this salad using a mixture of a medium EVOO from the store – a Picual or Koroneiki is a great selection – but we also really liked it with our Basil Infused Olive Oil and just a touch of Harissa infused Olive Oil or Baklouti Green Chili Fused Olive Oil if you like a bit of spice. Experiment and find your fave – you know my only rule is that there are no rules!
